Just a quick cupcake recipe for little Easter nest cakes,
really nothing new and probably something you have seen a gazillion times before
but hey if it ain't broke don't fix it!
I meant to say in my last cake post if cakes/baking is your thing you really should
have a nosey at the lovely Holly's blog - link she could give Cakeboss a run for his money!


Cupcake Recipe/Directions (makes approx 16)
- 125g Unsalted butter softened
- 125g Caster Sugar
- 2 Medium Eggs, lightly beaten
- 1 tsp Vanilla Essence or your preferred flavour
- 125g Self-raising flour sifted



Preheat the oven to 180°C / 350°F / Gas 4.
In a bowl mix the butter and caster sugar until light and fluffy.
Next add the vanilla extract and beaten eggs, mix well.
Sift in the flower and fold into mixture, mix should have a light texture and slide off spoon.
Spoon into cake cases, pop in the oven for 12-20 minutes until light golden brown.
Remove and allow to cool completely before decorating.


Butter Cream Recipe

-350g Icing Sugar
-175g Butter softened 
- 2tsp Water
- 1tsp Vanilla Essence

Sift the sugar into a bowl, add the butter - mix together.
Then add the water and flavouring and mix again.
You can either spoon it on or pipe it on if you wish.


Decoration
I kept my cakes really simple, I piped on the Butter cream in swirls
added a few mini eggs to the middle and sprinkled on a little Flake chocolate bar.
If you are unable to get a Flake you could always grate some chocolate,
it more or less gives the same effect.
