As I so often use fruit and other food as props in my posts I thought it was time to share
a recipe or two with you all and what better place to start than with a Cheesecake!
The beauty of making a Cheesecake is that the flavour possibilities are limitless
and not only is it straight forward to make it requires no baking, a perfect lazy girls dessert.
This recipe was from AllRecipes a little while back
so I can not take any credit what so ever
but all words and images are my own ;)
Ingredients (Serves 10-12 people, adjust to suit own needs)
- 600g Plain Digestive biscuits (broken into tiny crumbs)
- 500g Butter (I tend to use Lurpak non-salted)
- 900g Soft Cream Cheese
- 400ml Double cream
- Zest of 3 Lemons
- Juice of 1 Lemon
- 100g Caster Sugar
Directions
1.Place the Digestives into a food bag ( I tend to double bag) and use a rolling pin to smash them into
tiny fine crumbs.
2.Next take the Butter and place in a pot and melt gently over a light heat using the cooker.
3.Combine the Digestives and Butter until you have a thick golden brown paste, place mixture into bottom
of your cake tin and using pressure such as a spoon press the mixture down into the tin.
Leave the mix to cool for 30-40 mins before moving on to step 4,
to speed up cooling process pop the cake base into the fridge.
4.Grate the Lemons and collect the zest, then squeeze the juice from one - set aside.
5.In a large bowl combine the Soft Cream Cheese, Double Cream and Caster Sugar,
whisk until well combined and aim for a soft peak consistency.
You will find this step so much easier with an electric whisk.
6. Into the cream mixture pour in the Lemon Juice and Lemon Zest and lightly whisk again.
7. Scoop the cream mixture over the now cool biscuit base and smooth out so the entire base is covered.
8. Place in fridge for at least 4-5 hours and then tuck in!

DeleteMan...Cheesecake looks and smells amazing, but I've always been afraid to taste it because of the "cheese" aspect. Does cream cheese taste like normal cheese?
ReplyDeleteHaha no I totally know what you mean I first tried cheesecake by accident as i'm such a food scared cat haha! It tastes more like yoghurt if you get me? But not cheesy at all :)

Deletewe make this with ginger nut biscuits rather than digestives and it's actually AMAZING! We use condensed milk too. I love anything lemony!! xxx

I normally do a baked lemon cheesecake (ever so slightly more effort) because I prefer my cheesecakes a little more 'set', but this looks just as lovely! Next on my list of cheesecakes to attempt is chocolate and orange, mmmm. xx
