Another non-baking type of cake, great for when you don't have a lot of time!
Next week i'll share a proper cake but for now this will have to do.
Carmel cake is something that I grew up with, everybody's mammy and granny used to make it,
some call it millionaires shortcake etc but up here it is Carmel Cake!
If you search online there doesn't seem to be many recipes for cake of this kind, which kinda shocks me.


Ingredients (serves 12-14)
400g Digestive Biscuits (crushed into tiny crumbs)
250g Butter
400g Carmel (you can also boil condensed milk into Carmel, Google a quick method
                      but it is easier just to buy the pre-made stuff if you ask me)
3 Flake Bars (or 300g grated chocolate or chocolate sprinkles)


Using a light heat melt the butter and once completely melted combine the butter and digestives.
Ensure all the butter is soaked up by the biscuits and once you have a good paste empty into a tin
and using a spoon flatten the mixture into the tin and push down until you have an even flat surface.

Leave to cool completely and then apply the Carmel covering the entire base.

Next decorate with whatever chocolate topping you have chosen. 
We used flakes as that is all we had in the house but you can use melted chocolate, chocolate sprinkles,
grated chocolate or crushed chocolate bars - Daime is particularly good.


A really easy peasy treat that goes well with custard...so i'm told anyway.
